Joe's 'Giddy About Gourmet' Summer Feature

Ca D'Ambors Taleggio d.o.p. (Lombardy, Italy) ~ $12.99/lb

One of Italy's most majestic cheeses, Taleggio hails from the Northern mountains of Lombardy. Made with raw cow's milk and aged between 6 and 9 months, this washed rind cheese is made for summer. It's a little bit of a stinker, but don't let that foold you! Medium soft in texture, the flavor remains somewhat mellow and milky, redolent of earthy, mushroom flavors. Pair it with ripe peaches or berries, cured salami, almonds and your favorite bottle of Prosecco, rose or even German lager.
